The Husband is preoccupied coding tonight so dinner tonight was just for myself, though I did a couple of other things in the kitchen as well. First, by request, I baked some bread. Then, by necessity, I baked some salmon. Then dinner.The Husband asked for some bread and with my wonderful bread maker and the box of mix I keep just for this occasion, I was happy to oblige with a caraway rye bread. Then I had some salmon that I bought at the Amish market over the weekend which needed to be cooked before it went bad. I had originally planned a sake-soy-ginger marinade but ended up just throwing some Chef Paul on and into the convection oven it went. I figure most of it will become baked salmon salad for lunch tomorrow.
Also at the Amish this weekend I grabbed what I thought was a bag of spinach. At some point I decided I was going to make spinach and snap peas sauteed in garlic and olive oil. So I started dinner tonight with that premise. Sliced 3 cloves of garlic and sauteed in some olive oil. After a few minutes I removed the garlic and added one thinly sliced baby potato and sauteed that for a few minutes. Added a ginormous handful of sliced mushrooms since I just love sauteed mushrooms and let those sweat out for a while. Threw in some snap peas (next time I’ll throw in some more). And here’s where things got dicey. I pulled out a handful of spinach to wash before throwing it into the pan only to realize that it wasn’t spinach, and sauteed lettuce just doesn’t do it for me.
So to finish up the dish I did, for me, the unthinkable. I added an egg and scrambled. Not a big deal for most people, I know, but I don’t eat eggs. I have no problem with eggs if they are in something but other than the occasional egg salad, I do not eat eggs. I don’t think I’ve cooked an egg for myself in more than ten years. What can I say? I needed some protein and that was it other than the salmon. Not to mention that when I used to eat eggs one of my favorite things to make was sauteed mushrooms with scrambled eggs.
For dessert, the first cherries of the season from the farmer’s market. Good not great. The apricots this week were the best fruits of the bunch.
